Eggcellent Tofu Scrambled Eggs



  • 1 block broken up firm or medium tofu

  • 1 tbsp oil or vegan butter

  • 1 tbsp Wholly Loaded It's Eggcellent seasoning

Instructions: Heat oil in pan over medium heat. If you’re adding extra ingredients to your pan like garlic, onion, salsa or mushrooms, now is the time to add those veggies! Break tofu up over pan and mix to coat in oil. Add Eggcellent seasoning. Cook it up for about 5 minutes or until the tofu reaches your desired crispiness. Add tomatoes at the end for about a minute so they don’t turn to mush. Enjoy with toast, home fries or just on their own.
