Garlickin' Good Seitan

GARLICKIN' GOOD SEITAN RECIPE

Ingredients (for a crowd):

  • 2 1/4 cups vital wheat gluten (I used Bob's Red Mill brand)
  • 3/4 cup all purpose flour
  • 3 tsp. Wholly Loaded Garlickin' Good seasoning
  • 1 3/4 cups vegetable broth (I used 2 cubes vegetable bouillon mixed with water)
  • (optional) 1/2 tsp. salt

Ingredients (for 2 servings):

  • 3/4 cup vital wheat gluten (I used Bob's Red Mill brand)
  • 1/4 cup all purpose flour
  • 1 tsp. Wholly Loaded Garlickin' Good seasoning
  • 2/3 cups vegetable broth (I used 1 cubes vegetable bouillon mixed with water)
  • (optional) 1/4 tsp. salt
Instructions: Use a whisk or a sifter for your dry ingredients. Combine until you have a light, fluffy powder. Add vegetable broth and knead about 3 minutes until you have a nice ball of dough. It will seem sticky and that's okay but add some flour if the dough is sticking to the sides of your bowl. Set up your double boiler, grease your colander, tear off bite sized pieces of dough and toss them into the colander. If you'd rather have a large ball of seitan that you can slice for sandwiches or to have over some mashed potatoes or rice, you can just take the ball of dough and pop it right into the colander. Steam your seitan for 10 minutes, tossing/rotating after 5. Remove seitan from double boiler and cook 10 minutes in some sesame oil, olive oil or vegan butter. Toss in sauce of your choosing and enjoy! Take pictures of your seitan meal and send them our way so we can share some love on social media!

Give it a smoky mushroom beef flavour by adding:
  • 3 drops liquid smoke
  • swap the vegetable bouillon for mushroom bouillon
